Chinese Vegetable Broth

Regardless of warmer days, I adore soup and appreciate it all year round. It soothes me. My nan and mom, always serve soup prior to a main meal and for me, it takes me back 'home' if not only for a little while.

The following recipe was inspired from my Vital Vegetables BBC good Food Cookbook. The original recipe required frying kale on the side, however, I chose not to do this. Several other changes were made as well. The vegetable broth I made for this soup, contained your usual mixed vegetables along with half of a deseeded red chilli to 'spice' it up just a tad. It may have been the first time I made this soup but it is one I plan to make again and again. To me, it is a Tried, True and Tested recipe that I would like to submit to the lovely mother-daughter duo at Equal Opportunity Kitchen, Giz and Psychgrad. A Happy Belated Mother's Day to all mothers who celebrated yesterday- hope it was a good one for you.


Chinese Vegetable Broth
Serves 4

2 garlic cloves
1 lemon grass stalk
an inch piece of fresh ginger root, chopped
3 spring onions, sliced
half of a red chilli, deseeded and chopped
3 pints of fresh vegetable stock
about 5 baby sweetcorns, halved lengthways
1 small carrot, cut into sticks
1-2 Pak Choi
handful of chopped curly kale
300g of fresh Chinese noodles
1 T dry sherry
2T of soy sauce
2T of lime juice

Blend the garlic, lemon grass, ginger, spring onions and chilli to a paste. Heat your fresh vegetable stock in a pan with the paste until boiling. Reduce the heat, cover and simmer for 20 minutes.

Add your fresh vegetables; corn, carrots, mushrooms, pak choi, cruly kale and noodles for 5-10minutes. Add the sherry, soy sauce and lime juice about 3 minutes to the end.

The soup looks vibrant and delicious. The only ingredient I would have trouble with is 'the curly kale', I've never been able to eat this!

Asian foods are my all time favorite!

Actually this strikes me as a "lite" summertime soup, maybe because it contains your homemade (very impressive) vegetable stock instead of a heavy tomato sauce based broth. Lets face it, your in England and I'm in Washington State, we don't get summer until August so we can have soup 10 months out of the year :)

I also love soup no matter how hot it is :) Like in your case, my mother and grandmother always prepared soup as the first course :)

I have a question, as I would like to try the recipe tonigth :), what is pak choi? I googled it and saw that it is a Chinese vegetable, but is there something similar that I can use instead because I really doubt I will find it here :(

Del- You don't need to use pak choi, in fact, it wasn't in the original recipe and yes, I doubt you can find it in Malta lol! I would recommend any green veg of your choice- curly kale is a type of cabbage so any cabbage you can get hold of should be fine.

I can't stand soups in summer... it's beyond my control ;-) I don't like too hot temperatures and having a soup raises my body temperature and I feel so uncomfortable.... but these days we are having a break and we've had 15ºC (amazing for this time of the year).... sooooooo, I would love to have a plate of your soup, darling! :D
