A Taste of Yellow


Lemon Cake With Strawberries
(adapted from Simple Home Baking-Carol Pastor)

2 large free range eggs
100g of caster sugar
100ml of double cream
zest of a large lemon
lemon juice from half a lemon
115g of sifted self-raising flour
1 tsp baking powder
50g of melted butter

For the Icing
1/2 cup of double sifted icing sugar
juice of half a lemon
grated zest from an orange or lemon peel



Preheat the oven to 180C. Lightly beat the eggs and sugar together. Beat the cream into the egg mixture for about a minute and add the lemon zest and juice. Fold in the sifted flour and baking powder, and then fold in the melted butter.

Fill either a 1 lb loaf tin lined or greased small ring mold. Bake for about 40-45 minutes in the centre of the oven. Leave to cool on a wire cooling rack.

To make the icing, combine the double sifted icing sugar with the lemon juice and drizzle over the cake.

Grate a bit of orange or lemon zest on top and serve with strawberries in the centre or on the side.

Hiya Pixie! This looks like a classic springtime cake :). Strawberries are always so lovely on top of cakes, and I know they probably compliment the lemon cake very well :). I love lemon based cakes, I actually just baked one last weekend :). They are always so fresh and light. Beautiful picture :).

Looks (and sounds) beautiful!

You use a mixture of volume and weight measurements...I thought across the pond you only use weight? I found some weight-to-volume charts to translate that kind of thing, but it's time consuming. Might be worth it on this one, though.

stellar contribution, pixie! there's just something about lemon flavor that causes me to eat huge portions of desserts made with it without feeling guilty. for the sake of my figure, i should probably figure out what that something is and stay away from it. :)

I can't believe you only made a cake for the first time a little while ago; this is perfect ^__^. I love how bright it is... guh, I love lemon, basically.

About the muffin in the teacup (sounds like a book title; what d'you reckon?), I saw someone else do something similar with a cupcake first ^^. I can't remember who, but I can't take responsibilty for it XD. Sigh.
