Lemon Cake With Strawberries
(adapted from Simple Home Baking-Carol Pastor)
2 large free range eggs
100g of caster sugar
100ml of double cream
zest of a large lemon
lemon juice from half a lemon
115g of sifted self-raising flour
1 tsp baking powder
50g of melted butter
For the Icing
1/2 cup of double sifted icing sugar
juice of half a lemon
grated zest from an orange or lemon peel
Preheat the oven to 180C. Lightly beat the eggs and sugar together. Beat the cream into the egg mixture for about a minute and add the lemon zest and juice. Fold in the sifted flour and baking powder, and then fold in the melted butter.
Fill either a 1 lb loaf tin lined or greased small ring mold. Bake for about 40-45 minutes in the centre of the oven. Leave to cool on a wire cooling rack.
To make the icing, combine the double sifted icing sugar with the lemon juice and drizzle over the cake.
Grate a bit of orange or lemon zest on top and serve with strawberries in the centre or on the side.

Lovely and really nice!!! Gloria
This looks so easy to make. I have all those things on hand. Love the lemn icing Pixie. Yumm! A great entry for a great event. Well done.
Hiya Pixie! This looks like a classic springtime cake :). Strawberries are always so lovely on top of cakes, and I know they probably compliment the lemon cake very well :). I love lemon based cakes, I actually just baked one last weekend :). They are always so fresh and light. Beautiful picture :).
Hello ~Gloria :) thank you
Pete- it is really very simple to make just about 5 minutes preparation- I love cakes like these best.
Hi Sophie, thanks for stopping by- now that strawberries are in season I can really start enjoying them!
Looks (and sounds) beautiful!
You use a mixture of volume and weight measurements...I thought across the pond you only use weight? I found some weight-to-volume charts to translate that kind of thing, but it's time consuming. Might be worth it on this one, though.
Pixie,
I must say that your photos are betting better & better. They are showing your dishes in a much better light.
You win a T-shirt too! lol
Pixie, that is a gorgeous cake! And what lovely words to your loved ones.
Beautiful cake. Much more successful than the one I threw out earlier this week :(.

Lovely recipe Pixie. You've given me an idea here. Such a lovely cause and there isn't a family on earth, I believe, that has not suffered a loss from this illness.

Oh yes, this is an unstoppable combination.
Such a gorgeous looking cake - well done Pixie!
stellar contribution, pixie! there's just something about lemon flavor that causes me to eat huge portions of desserts made with it without feeling guilty. for the sake of my figure, i should probably figure out what that something is and stay away from it. :)
Pixie this looks lovely!

Oh my gosh, you are amazing for finding that recipe! And this cake looks amazing too! I'm having some ladies over for lunch today, and this looks just perfect for dessert.
I've been seeing so many great cakes with lemon in them recently. I'm also planning my birthday cake and all I can think of now is lemon... I think i might just have to give in to this temptation.
Great entry for taste of yellow!
I'm not a huge fan of lemon cake but these pictures have tempted me. Gorgeous!
What a truly beautiful cake, Pixie. And aren't I right in thinking that it wasn't so long ago that you'd never baked a cake? There is clearly no stopping you now - this one is stunning!

Hi Pixie :)
Nice blog :) I love to cook! I always try to make some time to try new recipes or just to eat healthy during the week which is usually so hectic. Making some time available to dedicate to this passion (cooking) is really a huge effort as I work eight hours a day :( But it's worth the attempt! :)
That cake looks lovely! I would like to try preparing it one day.
I will add your blog to my blogroll as I intend to pull my socks up and cook more now that I am more settled in my new home :) Again, great blog. Keep it up and let's keep in touch! :)
What any absolutely gorgeous looking cake Pixie! Lovely shots too!

Thank you everyone for calling by and for your very kind comments; they're always appreciated. As for the photos- well, I certainly try and it really depends on the light and my mood!:)

I can't believe you only made a cake for the first time a little while ago; this is perfect ^__^. I love how bright it is... guh, I love lemon, basically.
About the muffin in the teacup (sounds like a book title; what d'you reckon?), I saw someone else do something similar with a cupcake first ^^. I can't remember who, but I can't take responsibilty for it XD. Sigh.
