Maltese Squid Stew T&T&T

Originally, I was planning on posting a recipe for chilli: it's tried, it's tested, it's true. However, I really wanted to come up with a dish that my mother would cook for the family while growing up. One that she learned from her mother.


Giz is like a virtual 'mum' to me and I feel psychgrad is so fortunate to have her mum posting recipes with her. I'M JEALOUS! I love the mother - daughter team. Take Giz's last comment on my F.O.F.--->"Ok - here's the cure - you must get on a plane immediately and cross the pond - I know a wonderful doctor who deals ONLY with FOF patients. He does this aversion therapy thing where you have to fry for 24 hours straight. He even provides polysporin for each time you burn yourself." and then there's the Meatloaf post.

Anyhow ladies, I'm not sure how you feel about Squid but this is truly a delicious dish for seafood lovers. It's the first time I made my own Squid Stew and it is now a personal favourite for us. The squid comes out extremely tender and it's Tried, Tested and True!



Squid Stew

12 squid (tubes and tentacles)cleaned and cut into pieces
2 chopped onions
a couple of crushed garlic cloves
handful of peas
T of capers
a glass or two of red wine (one for the stew, the other for you)
6 peeled and chopped tomatoes
tspn of dried marjoram (or fresh)(mum still calls it marijuana)
tspn of dried mint (or fresh)
handful of peas



Fry the onions and garlic until softened. Add the chopped tomatoes, wine, capers and squid. Add the dried herbs and simmer for approximately 40 minutes. Throw in your peas and continue to cook for a further 3-5 minutes. Serve with Crusty Bread or Spaghetti.

Pixie's Note: Potatoes and carrots can also be added to the start of the stew.

This is very interesting Pixie. Sounds delicious. I've never had squid done in a stew before so I must try this...("marjoram-mum still calls it marijuana"...LOL...that was so funny!).

It's a winner for me, Pix. I love squid - anyhow, anytime, anywhere! Like you say, the trick is not to overdo it so that it becomes tough. Well done, you!

Nice dish Pixie! Never had squid stew but it sounds really good. I'd be worried about stewing the squid; that they would end up tough. I had an experiment a while ago making fried calimari and the recipes I had varied from 30 seconds to 2 minutes fried. I found 50 seconds to be a good time. I'm just not real experienced working with squid.

squid, eh? i'm sorry to say that it would require more than one glass of wine for me to be brave enough to try it.

squid makes me squeamish. :)

mr orph- If you simmer it on very low heat and purchase fresh squid, it should come out extremely tender while stewing. Ours was very good; my mother did mention the last time she made hers it came out a bit tough but she believes it was due to the squid she purchased. HTH some.

That looks really good! I can do calamari just fine, but it's the tentacles that get me. I just can't eat them. They look all...tentacley. lol!

Yay...for more Maltese dishes. You're opening a window to a cuisine I did not know really existed.

Finally, how does pronounce, 'gbejniet tal-bzar'? LOL

Pete I'm not fluent in Maltese AT ALL lol, anyhow looked it up as I don't know how to spell a word of Maltese. That's high on my list to make, but it's a special skill ( i believe!) Oh and How I LOVE THAT CHEESE!

Pixie this looks very similar to a spanish dish my mother makes with squid and it has potatoes. I love squid, especially in the calamari form ;o)

I don't know about Giz, but I love squid! Mind you, my squid consumption has been limited to fried squid, so adding stew is probably a good next step for me. This looks delicious. Great submission!

I saw some of these little babies at Choices yesterday along with a whole slew of fruits and vegetables out of the ordinary. I will have to get my foodie adventurer hat on and give it a go:D Will I feel like I am on holiday in Malta if I close my eyes...I hope so:D

First of all - thank you so much for such a personal submission - I love that this is a handed down family recipe. Makes me all warm and fuzzy.
Secondly, just for the record, I do like squid.
Thirdly, I don't think I have to supply Psychgrad so she can send things to you. I can send them directly and then Psychgrad is SOL on new things ..har har har.
and finally,
I really like your mother's marihuana...oops, I meant marjoram. I'm high just writing about marjoram. Hey..I was a child of the 60's - cut me some slack. Now be a good virtual daughter and get me some tea :)

A quick read of the title had me thinking this was a malteser squid stew which got me really rather panicked. This is a huge improvement on that possibility. I love squid, and this looks luscious.

I think it looks very good, and delicious. I haven't eaten a lot of squid though. Just calamari. Deep fried.

Show us more SQUID!! Love it Pixie! The tenticles look really tender and the peas must be so tasty in this stew! The squid we make always has an Asian flair to it. We'll have to cook beyond our Asian squid repetoire!

Another delicious Maltese dish. I never had squid stew before, but sounds good to me. I am a seafood lover. I have some squids in the freezer, will try this.

This looks like a really fresh meal. The mint is what peaked my interest! It looks like it would be delish just with some grilled bread and w/o the pasta! yum...

Ooh this looks great. I've only ever had squid deep-fried X__X and never dared cook it myself (not much point with my family's limited adventurous-ness) but I adore all seafood ^__^.

What an interesting recipe! I've loved squid fried and grilled... never had it in a stew. Sounds intriguing!
