Going Bananas?

Maninas: Food Matters is looking for one perfect ingredient and offering her readers a chance to win this fabulous book, One Perfect Ingredient, Marcus Wareing. One ingredient I have often baked with are Bananas. There are tons of recipes online for Bananas, Bananas, Bananas and I have a terrible time throwing them out when they're about to go off. And who can resist a special treat?



It's been a while since I posted a banana recipe. If you've been reading my blog since the beginning, you'll know I'm notorious for having leftover bananas around and feeling obligated to bake something rather than throwing them out.

Well, I believe I may have found the 'perfect' banana bread recipe (thus far) and lo and behold it's a Nigella Lawson recipe, which she adapted from Jim Fobel's Old-Fashioned Baking Book: Recipes from and American Childhood. Admittedly, after making that awful rhubarb pie, I was a bit hesitant of the possible outcome of this cake. Will this recipe work? I proceeded with caution.

I opted for the chocolate version- hey, I can't help but be a chocolate lover and after all, there are 4 bananas in this recipe so it's naturally GOOD for you. I also added a handful of chocolate chips (they're good for you too), reduced the amount of sugar and butter, and traded the sultanas (raisins) for dried cranberries. The outcome was spectacular, so my advice to you is HOLD ON TO THOSE BANANAS and MAKE THIS BANANA BREAD!


Chocolate Banana Bread
(Adapted from Nigella's Banana Bread, How to be a Domestic Goddess)

100g dried cranberries
75ml dark rum or bourbon
150g plain flour
25g cocoa powder
2tspn baking powder
half tspn bicaarbonate of soda
half teaspoon salt
100g unsalted butter, melted
75g sugar
2 large eggs
4 small very ripe bananas, (about 300g w/o skin)
handful of chocolate chips
handful of chopped pecans
1 tspn vanilla extract
23x13x7cm loaf tin, buttered and floured or with a paper insert

Put the dried cranberries and rum in a smallish saucepan and bring to the boil. Remove from the heat, cover and leave for an hour if you can, or until the cranberries have absorbed most of the liquid, then drain. ( I only left it for half an hour.)

Preheat the oven to 170ºC/gas mark 3 and get started on the rest. Put the flour, cocoa powder, baking powder, bicarb and salt in a medium-sized bowl and, using your hands or a wooden spoon, combine well. In a large bowl, mix the melted butter and sugar and beat until blended.

Beat in the eggs one at a time, then the mashed bananas and chocolate chips. Then, with your wooden spoon, stir in the pecans, drained cranberries and vanilla extract. Add the flour mixture, a third at a time, stirring well after each bit.

Scrape into the loaf tin and bake in the middle of the oven for 1 to 1 and a quarter hours. When it's ready, an inserted toothpick or fine skewer should come out cleanish. Leave in the tin on a rack to cool, and eat thickly or thinly sliced, as you prefer.

I love bananas and chocolate but have never thought of adding cranberries into the mix - unfortunately I rarely eat bananas so only buy them for cooking - so they are rare enough for me to love them when I have them!

What a great looking banana bread Pixie! It's always great to find recipes to use ripe bananas in and this looks perfect! I would love a slice of that sat with a good cup of tea ;) Great bake.

mmmmm! That looks so good! I love banana bread. My 5 year old son just asked to make some, but I had to explain that he never leaves any to get overripe. hehehe. I usually have to hide some from the kids.

By the way, if you've got bananas that are nice and brown, but you don't have time to use them right away, they freeze well. You can freeze them whole, or peel and mash them, then freeze them in a ziploc bag--flatten them out in there so they thaw quickly.

I too am so bad for having leftover bananas lying around! I can't help it because I only like to eat them 'straight' when they are unripe. When the start to ripen they gotta be cooked! This looks like a great recipe.

Sounds like it would be delicious (and obviously healthy! ;-) ) I never have bananas on hand as I can never seem to get through them quickly enough before they go funny. But now banana bread...that sounds like something I could get through in time.

I've been trying to build up a list of breakfast foods so I can start having a better way to start the day, which so far means breads that border on dessert, but this totally works for me, lol

I recently saw another chocolate and banana bread recipe. Maybe it's a sign that I should drop everything that I am doing and go make some myself.

The pictures didn't load for me (which could just be my computer acting up), but I'm sure it was great.

I love all the "stuff" in this banana bread - rum - yee haa - 2 kinds of nuts and cranberries - sounds like it would be really solid and you know you've got a substantial banana bread.

Pixie this is definitely something I have to make but before making it I have to hide the bananas somewhere because they never become ripe as my kids love them. I can imagine the combination with cranberries and chocolate.

I made a chocolate banana bread last week from this book called The Home Baker, and it turned out terribly. I blame the book:) honestly, the directions were lousy. not the best cookbook in my collection. I am going to try your adapted recipe and will let you know how it turns. I won't blame you if it doesn't turn out nicely:)) Thanks for sharing! Oh, your bread in the picture is gorgeous!

Bananas are the ideal food--so nutritious, delicious, and versatile. The only thing better than having a slice of your chocolate banana bread right now would be having it slathered in peanut butter. :) Looks truly moist and delicious!

I'm not a banana person at all Pixie...but this is making mouth water. I buy 6 every second day & make sure the kids have a banana shake daily...the rest go into muffins etc. This sounds great! All the best for winning the book!! I'm 'out of bounds' for the event as they say!!

That chocolate banana bread looks really good! I have added chocolate chips to banana bread but I haven't tried making the bread itself chocolate yet.

chocolate and bananas are fabulous together. I learned of a choc/banana dessert in my first year in the UK and it's come in handy many times. Turn the oven on, take a banana, wrap it in foil, split it down the middle, and shove in some cadbury flake (or other chocolate). Cook it till its gooey. It's WONDERFUL, but then so are bananas.
