Spicen It Up!

Anyone in the mood for a bit of chilli?



No fear, I only used just the one!

It's time again for No Crouton's Required Event, hosted by the lovely Holler at Tinned Tomatoes. This month Holler and Lisa are searching for a bit of Spice. Well ladies, do I have a tasty and Spicy gorgeous Vegetarian Soup for you.



Ooodles of Noodles of Goodness!



With just the right amount of spices to tickle your taste buds!


Thai Noodle & Vegetable Soup


Vegetable oil
garlic clove
1 tsp ground turmeric
a fresh chilli (seeds removed)
1 dried chilli pepper broken into pieces (seeds removed)
1 tspn of chilli powder
50g of creamed coconut
1 1/2 pints of vegetable stock
juice from one lime
a spoonful of peanut butter
100g egg noodles, broken into pieces
3 spring onions chopped
mange tout
baby corn, sliced lengthways

chopped fresh coriander
dessicated coconut and red chilli to garnish (optional)


Heat the oil in a pot and fry the garlic, fresh chilli and dried chilli for a minute.

Crumble the creamed coconut into the vegetable stock and stir until dissolved. Pour into the pot and add the lime, peanut butter and egg noodles.

Cover the pan and simmer for 15 minutes. Add the mange tout and baby corn and continue to simmer for a further 10 minutes. Add the spring onions and fresh coriander and allow to cook for a further 5 minutes.

And if that isn't hot enough for you, heat the desiccated coconut and chilli in a small frying pan for a couple of minutes. Serve the soup and garnish with the coconut and chilli.

Grab yourself a large glass of water and ENJOY!

Pixie's Note: For meat lovers, fry some chicken first with the garlic or add some shrimp about 5 minutes prior to turning off.

Oh yeah, chillis are the best ingredient to spice up your life. This soup looks delicious! I am bookmarking to make it before the temperatures start to go up again.

Yes! Chilies for me, anytime!! I tend to crave for spicy dish once in a while. And when the dish is in the making, I tend to put as many chilies as possible to satisfy my tastebud :) I just love spicy food.. yum yum yum.... lovely dish.
