I may have impressed you all with my cannolis, and I know some of you don't believe me when I say I'm fairly new to cooking but honestly, I am. I've yet to make my first home made hummus until earlier on in the week. I decided to attempt Indigo's version of Hummus, from Happy Love Strawberry, by quickly reading through the ingredients and running off into my kitchen without printing up the recipe. Why didn't I simply print out the recipe? Pure Laziness, there's no other reason. In the end, my hummus was a tad dry, not because of the lovely talented Indigo but because I didn't follow the exact amount of ingredients and decided to listen to my hubby and kept adding tahini paste. (Blame it on Bu, it's ALL his fault.)
For those of you out there, who have yet to make your own hummus, I do suggest you to do so. It's not that complicated and should take less than five minutes.
I wanted to recreate a lunch I had while visiting Folkestone, it was a fair attempt. Though, I believe I also should have waited last minute to pan fry the halloumi. In the end, lunch was good and I will make it again in the future!
Ciabatta Bread, layered with homemade Hummus, basil leaves or mixed green leaves, roasted red peppers (yes, peeps, from a jar) and topped with pan fried Halloumi and a few basil leaves.

I was planning to make a beetroot hummus last week but can't seem to find tahini anywhere! Where did you find yours?

Hummus is a dip that's grown on me too. Look on the bright side, you have all those other hummus recipes to perfect your hummus abilities.

For a newbie at cooking you certainly seem to do pretty ok. Great hummus and i adore the ingredients in that sandwich.
Antonia, I've left you a comment about purchasing the tahini but thought I should mention it to others who can't find it!- You can purchase it from Lidle's or a local Polish shop. My guess is they may even sell it at Tesco's but that's a guess.
oh and I would love to try a beetroot hummus- fab idea!

I wouldn't have known you're new to cooking from the looks of things. :-) I think that's the best part of the food blogging community--there's so much to learn from one another's endeavors, styles, ideas, etc, and in the end, its amazing to see how far along things have come. I'm also newer to cooking and had a laugh the other day looking at some of my first posts...I mean what the hell was I thinking! lol.
But anyways, I digress. My wife and I used to be big on hummus...but it was storebought. We had it almost daily until we both just got sick of it and never had it since. I should definitely try homemade--it certainly sounds easy enough and it is a delicious condiment...

I love homemade hummus! I don't make it often though because I tend to want to eat the tahini straight from the jar. Your sandwich looks great too!
I love Hummus and have made my own in the past. I am loving the red roasted pepper hummus available in stores now (i wonder if there is a recipe out there).

There is a local Greek restaurant that markets their hummus and tzatziki. It is all freshly made...so the point is I never really make my own. I can make a mean hummus myself though when the need arises. Love the way you're experimenting with all the delicious recipes we find on your blog..way to go girl:D

I love hummus. I keep meaning to make it, but haven't actually gotten to it yet. A friend of mine uses peanut butter instead of tahini. I'm not a fan of the swap.
Hummous is very easy to make at home! I *love* halloumi; we also make halloumi sandwiches for a quick meal. :)

Ah, making some hummus at home tonight to take with us as emergency eats on our family-get-together weekend. Grilled halloumi though - how did I forget to buy the halloumi to go with it?!? I don't think there's any finer food in the world...

hummus is one of the best dips to make and eat - I love your hummus and haloumi on bread! And I am surprised to hear you are new to cooking given the ambitious things you bake! But there is nothing like getting up to your arms in flour and eggs to feel less of a newbie

About tahini:
It's worth knowing that tahini has some magical properties. Nutritionally a brilliant food - full of all the important amino acids and omega fatty acids.
But the property of tahini that astonishes me most is its propensity for thickening and drying. If you add acids e.g. lemon juice to tahini, it reacts and turns into a thick, dry paste (I don't know why!!). So in sauces or dips, you need to accommodate that reaction. In hummus, you can make your mixture more moist by adding olive oil (if you're going the unadulterated greek route) and/or some of the juice from the chickpeas (if you're a bit health-conscious and want to use less fat!) In a sauce, like tahina (the yogurt-based sauce that goes with felafel), you would add yogurt (not the thickest yogurt, either).

Once you make hummus there is no turning back to store-bought and like you have discovered, the possibilities are endless.
This really looks beyond tasty! When ever we go to the farmers market, we always buy a container of fresh hummus and pita chips from the hummus guy. During the drive home, we much on the hummus and chips till they're all gone!
