Cooking With ...We are Never Full

Ever come across a recipe and know INSTANTLY you have to try it immediately? That's what happened when I read We Are Never Full's Recipe for Jamaican Jerk Chicken. Amy and Jonathan, who reside in NY, have a gorgeous food blog that not only contain fabulous recipes but they also have a fantastic Food Commentary Section with entries such as Does Hollywood Hate Food and Bloody Delicious Time in England, along with a Restaurant Review Section, featuring restaurants in NYC.



As for the Jamaican Chicken it was Deeelicious. Earlier in the day we prepared the seasoning, making a few changes as we didn't have all the spices on hand. Since we bought some jerk seasoning we cautiously used just a tablespoon (that seasoning is DAMN HOT!) instead of all spice, added fresh garlic and onion (in place of the powder) and left the extra hot pepper out.

For the rice, we ended up using kidney beans in chilli,not sure when/why/how I bought chilli kidney beans, but they fortunately, worked. Since I purchased some sweet plaintains (I love platanos!), earlier in the week, we replaced it for the tostones (green plaintains). The recipe was well written and very easy to follow and didn't take much time to make. Brilliant! The result was incredibly delicious and we shall happily follow this recipe time and time again. That's so funny, I ended up seeing a show called "Take out the take away" where a famous chef was cooking what a couple would normally order from the take away and tried to prove he could do it better, quicker and for cheaper and he did!

This is all exactly what he cooked! With Kidney beans and all! I've been looking for plantain ever since to try it all out but have had no luck yet :o(

Jerk chicken is one of my favourite summertime meals.

It is just a recipe that never fails to please innit? I make my own version of jerk seasoning and keep it in a jar, give it a go!

Thanks, pixie! I'm gonna cry! Thanks for such a nice post. Your dish looks delish and, I gotta admit, I love eating maduros (the ripe, sweet plantains) with my jerk - I think the sweet goes SO well w/ the spicy. The husband doesn't love the maduros that much (sigh!). And, Ruthebabes - I wish I could say I was that "famous chef" from that show... but, sadly, I am not. What I can say is that Jerk w/ Rice & Pea is as traditional a combo in Jamaica as Spaghetti and Meatballs is in America (or Fish and Chips in the UK). I def. didn't get too creative with trying new sides b/c sometimes I think simple and traditional and authentic is the way to go with certain dishes. Anywho's... thanks again Pixie for the major shout-out. We really appreciate it. I could see why you'd want to make this dish. It's so rich with delicious flavors and textures. And like you, I'm crazy for plantains. I just made some the other night, simply sauteed and splashed with lime juice and hot sauce. Yum.
