I honestly wasn't too impressed with rhubarb the first time I tried it. (Refer to Nigella's Rhubarb Tart.) I was told of all it's glory and felt overall, utterly disappointed. When Julia from A Slice of Cherry Pie announced her In the Bag event, one of the selected ingredients being rhubarb,for this month, I felt somewhat hesitant of coming up with a lovely dessert that I would enjoy. 
I chose to keep it as simple as possible so that other flavours wouldn't disturb the taste of the rhubarb itself. Which is slightly tart and sweet once the sugar is added. After reading various recipes from books and online, I opted for Rhubarb Fool. Simple, easy and delicious. 
Here's my experimented version:
Rhubarb Fool
(serves 2)
200g of rhubarb cut into 1/2" pieces
50g of brown sugar
1/2 teaspoon of rosewater
A tablespoon of fresly squeezed orange juice
tspn of orange zest
Greek Yoghurt
flaked almonds
On a medium heat cook the rhubarb, brown sugar, orange juice, zest and rosewater till it reaches boiling point in a small covered pan. Uncover and allow the liquid to thicken on a low heat.
Remove the rhubarb pieces earlier on if you don't want them to go too smushy and continue to cook the liquid till it has a syrupy texture.
In a small glass or bowl, add a large spoon of yoghurt, followed by some rhubarb and it's syrup, sprinkle some almonds and repeat another layer.
Best served chilled. Enjoy!

I do love rhubarb Pixie. Someday you might like to try a rhubarb cheesecake. I have a recipe on my blog. The ladies at work actually request it every year.The rhubarb fool does look delicious..I am in every time rhubarb is spooned out :D I remember as kids sitting in my neighbours' rhubarb patch with a bowl of sugar.
I wish I knew where to find rhubarb--I'd certainly like to try it. Did this dessert change your opinion of it? It certainly looks tasty!

That rhubarb fool looks good. And it uses Greek yogurt...mmm...
I'm curious about the rose-water. Can you taste it in the dessert? I've never baked with rose-water but I use dried culinary lavender often and imagine there is a similar taste.

Oh yum I love rhubarb. One of my favourite ways of eating it is slightly stewed with vanilla and stem ginger, then used as a topping for yoghurt or porridge etc. Glad you gave it another chance.

Oh, beautiful!!! I love rhubarb, absolutely love it, but I can never find it in Southern California. I have fond memories of rhubarb compote with apples and raisins from my childhood. How I wish I had a recipe for that!

By the way, Emmeline, a fool is indeed very old-fashioned (though to make it with yogurt is a modern twist since it's traditional cream and/or custard). However, it's traditionally English, not southern.
