Maltese Spinach and Ricotta Pie

Remember the small pastitizzi's I wrote about a few days ago? Well the same day, I rolled out the other half of puff pastry and made some spinach pie. With spinach pie, you can basically add as much or little spinach as you wish. It is just so simple to make pie, that is, when you have ready made dough!

Spinach and Ricotta Pie

(serves 6-8)


375g puff pastry
about 100g of spinach (more or less)
250g ricotta
1 medium potato sliced thin
50g grated parmesan
1 egg
a handful of chopped parsley
nutmeg and seasoning
peas (optional)

Prepare the spinach by washing, cooking and draining it or use frozen spinach and squeeze out the excess water.

Mix the ricotta, parmesan, beaten egg, potatoes, prepared spinach and spices together in a bowl.

Roll out your pastry and line the bottom of your tray. Fill the pastry with the ricotta mixture and cover with the rest of the pastry.



Brush some egg on the pastry and prick the pastry with a fork. Place in preheated oven at 220C for 10 minutes, reduce the heat to 190C and continue cooking for a further 30 minutes. Serve warm and enjoy.

I love this Pixie!!!! It is similar to my favourite spanakopita...but it has my favourite food group added...POTATOES!!!!!

Wow - that looks truly scrummy! I'm sure Peter M and other Greek bloggers will correct me sharply here, but it doesn't look a world away from spanakopita. Not that that's a bad thing, you understand!

ghetti- i guess since malta has been ruled from various countries, including greece, it's recipes have been influenced from others

i'd love to make spanakopita in the future...greek cheese being a favourite, i'm sure to love it!
