
I've learned to cook this dish from my Great Aunt Rita, but have made a few changes to it as the years have gone by.
Ingredients
(serves 4 less you're really hungry 2 )
2 aubergines
corn beef (or other minced meet as explained in recipe)
onion
garlic
tomato sauce (again read recipe :) )
Cut the aubergines in half. Cut around the aubergines and scoop out the eggplant.
Fry up an onion and some garlic and add the aubergine and cook for about 10 min.
Add a small pack of mince meat or a combination of mince and pork or corn beef. Fry for about 10-15min.
Add a can of crushed tomatoes or half a bottle of tomato sauce. Simmer for half hr to 45 min. If you don't have a can of crushed tom. you can use two eggs and some tomato paste instead. You can also grate some parmesan cheese and add that too, plus, of course a few herbs.
Once done scoop mixture into eggplant. Peel and slice potatoes rather thickly and layer on bottom of oiled oven dish; place the eggplants on top. Bake until potatoes are ready. Should take about 30-45 min.
When I made this dish last, I used half a can of corn beef, some pork mince, half a jar of tomato sauce, chopped tomatoes, one egg, and some grated cheese. It's the best I made it so far.
